SO GOUDA!!!!

Ok I am officially addicted to this snack/meal (large snack, small meal)

I must share it. I have been eating it every day for about a week now. I love it. Please do yourself a favor and make it. Like now.

You will need:
2 eggs (don't ever make just one egg...that's just inefficient)

One piece of delicious whole wheat bread or English muffin

1/4 of an avocado, sliced. Don't be afraid of avocado...It's the GOOD fat. It makes your hair shiny.

AND THE SECRET INGREDIENT IS....
A slice of smoked Gouda cheese (you might have to actually go to the deli counter to have it sliced, get over it, it's worth it)

Fry up the eggs in a cute little 2-egg-sized-fry-pan from your mom...(I'll include my Grandpa Welcome's recipe for a fried egg, my fav way)

Slice up the avocado (with your b-day present from Dad, an amazing knife)

Next, toast your bread (in your free toaster from The Standifirds...make sure you put the bread on the side that actually toasts...In this case it's the left side. Your toaster might be different, or it might have TWO sides that toast...lucky)

Add a slice of smoked GOUDA... oh boy...

Spread your sliced avocado on top of that...

Top it all off with one of your fried eggs

Oh man.

I can't even describe how good this is. Is it just me? The crispy, hearty toast, creamy avocado, smokey Gouda, and warm perfect egg. The combo just kills me.

Save the other egg and 1/4 avocado for tomorrow's snack, when you will be craving it again...


*Grandpa Welcome's Fried Egg*
(I might have this wrong but I think Mom told me this was his recipe...or was it Grandma Freida's?)

Spray your pan
Turn the heat to medium
Crack your egg(s) into the pan (I poke the yokes here cause I don't like runny yellow stuff)
turn the heat down to low
put a lid on it
wait for the clear part to turn MOSTLY white, sprinkle with a little S&P
Flip your egg(s) and (this is the complicated part so be ready)
Immediately turn off the heat and splash a few drops of water on top of the egg, maybe a tablespoon?
Put the pan back on the warm stove and put the lid on. The other side will cook with the residual heat and be the perfect consistency (IMO) and the water keeps it moist.

Now go and do. You will thank me.
